Next to last stop on my Jewish Food & Culture Tour today on Manhattan’s Lower East Side: Kossar’s Bialys. There is a town in Poland named Bialystock that once had a Jewish community before World War II. Could these small round breads with a thumb print in the middle (the lesser known cousin of the bagel) be named after immigrants who came from there and continued to make them on the Lower East Side?
